Cream of Mushroom Soup

Cream of Mushroom Soup

Cream of Mushroom Soup

Ingredients

5 Tablespoons butter
1 1/4 Tablespoons oil
2 1/2 onions, diced
5 cloves garlic, minced
2 pounds fresh brown mushrooms, sliced
5 teaspoons chopped thyme, divided
2/3 cup Marsala wine (any dry red or white wine)
7 1/2 Tablespoons all-purpose flour
5 cups low sodium chicken broth or stock
1-2 1/2 teaspoons salt, adjust to taste
1/2-1 1/4 teaspoons black cracked pepper, adjust to taste
2 1/2 beef bouillon cubes, crumbled
1 1/4 cups heavy cream or half and half
chopped fresh parsley and thyme to serve

Instructions

Heat butter and oil in a large pot over medium-high heat until melted. Saute onion for 2-3 minutes until softened. Cook garlic until fragrant, about 1 minute.

 

Add mushrooms and 1/2 teaspoon thyme, cook for 5 minutes. Pour in wine and allow to cook for 3 minutes.

 

Sprinkle mushrooms with flour, mix well and cook for 2 minutes. Add stock, mix again and bring to a boil. Reduce heat to low-medium heat, season with salt, pepper and crumbled bouillon cubes.

 

Cover and allow to simmer for 10-15 minutes, while occasionally stirring, until thickened.

Ingredients

1 pound ground beef
1 medium onion, chopped
1/6 c. green pepper, chopped
1/3 c. ketchup
1/4 c. water
1/4 c. brown sugar
1 tsp. salt
2 Tbsp. Worcestershire sauce
1-2 shakes of hot sauce

Instructions

Add ground beef, onion and pepper to pan and brown, then drain.

 

Add remaining ingredients and stir well.

 

Bring to a light boil then reduce to simmer and cover until it thickens up.

 

You may want to add more ketchup and/or Worcestershire sauce to taste.

Ingredients

2 Tablespoons butter
2 Tablespoons extra-virgin olive oil
4 garlic cloves, minced
1/2 cup dry white wine or broth
3/4 teaspoon kosher salt, or to taste
1/8 teaspoon crushed red pepper flakes, or to taste
Freshly ground black pepper
1 3/4 pounds large or extra-large shrimp
1/3 cup chopped parsley
Freshly squeezed juice of half a lemon
Cooked pasta or crusty bread

Instructions

In a large skillet, melt butter with olive oil. Add garlic and saute until fragrant, about 1 minute.
Add wine or broth, salt, red pepper flakes, and plenty of black pepper and bring to a simmer. Let wine reduce by half, about 2 minutes.
Add shrimp and saute until they just turn pink, 2-4 minutes depending upon their size.
Stir in the parsley and lemon juice and serve over pasta or accompanied by crusty bread.

Chili con Carne

Ingredients

1 pound ground beef
1 cup onion, chopped
3/4 cup green pepper, chopped
28 oz. can tomatoes, diced
1 - 16 oz. can red beans, drained
2 teaspoons chili powder
3 whole cloves
1 bay leaf
1/2 teaspoon salt
1/2 teaspoon pepper

Instructions

In a large kettle or Dutch oven, cook ground beef and onion. Add green pepper until meat is browned.

 

Drain off fat. Stir in undrained tomatoes, red beans and spices. Bring to a boil, then reduce heat.

 

Cover and simmer 30 minutes. Find and remove bay leaf and cloves.

 

OPTIONAL: You can add a 15 oz. can of Contadina Tomato Sauce and a teaspoon of cumin.
